Italian Breakfast Pizza

1 sheet Bridgford White Whole Wheat Sheet Dough (24 oz.) Code number 6729
24 eggs scrambled
1 cup cherry tomatoes sliced
1 cup fresh spinach, finely chopped
1 cup mozzarella cheese, shredded

Lightly grease a half sheet pan. Remove one sheet of dough from case and place on sheet pan (remove paper from dough). Let thaw. Lightly brush dough with oil or melted butter. Let rise until puffy. Dimple dough with fingertips and bake in preheated 325° convection oven for 12- 15 minutes or until golden brown. Remove from oven and top with cooked scrambled eggs. Sprinkle evenly with tomatoes, spinach and cheese. Return to oven for 5 minutes (or until cheese starts to melt). Slice into 12 equal servings.

Each serving has 2 grain servings, 2 protein servings.
