Cranberry Nut Rolls

1 loaf Bridgford Frozen Ready-Dough®, thawed
4 tbsp melted butter or margarine
1 tsp ground cinnamon zest of one orange*
½ cup granulated sugar
1 cup dried cranberries or cherries
½ cup chopped walnuts

On a lightly floured surface, roll dough out to an 8 x 12 inch rectangle. Spread dough with 2 tablespoons butter. In a medium size bowl, mix together cinnamon , orange zest, sugar, cranberries and walnuts. Sprinkle mixture over dough. Beginning with the 12-inch side, roll dough tightly in jelly-roll fashion. Cut roll into 9 equal slices. Place slices in a greased 8-inch square pan. Brush rolls with remaining melted butter. Let dough rise until double in size. Bake at 375° for 20-25 minutes. If desired drizzle with orange icing. Orange Icing: Mix together 2 cups powdered sugar, 2 tablespoons milk or water, 1/2 teaspoon orange extract. *To zest an orange. Use the finest size of a hand grater to grate the outer peel of the orange. Do not grate the white part of the peel as it is bitter.
